The “January Comfort” Potato Soup

Ingredients

  • Potatoes: 2.5 lbs (about 6–8 medium) Yukon Gold or Russet potatoes, peeled and diced.

  • Chicken Broth: 32 oz (1 quart) low-sodium chicken or vegetable broth.

  • Onion: 1 medium yellow onion, finely diced.

  • Cream Cheese: 8 oz block, softened and cubed.

  • Shredded Cheddar: 2 cups sharp cheddar cheese (plus extra for topping).
