Italian Rustic Cabbage Soup

Prep time: 15 minutes Cook time: 40 minutes Servings: 4–6

Ingredients

  • 1 medium head of Green Cabbage, shredded or chopped into bite-sized ribbons

  • 3 medium Gold Potatoes, peeled and cubed into 1-inch pieces

  • 2 large Carrots, peeled and sliced into rounds

  • 1 Yellow Onion, diced

  • 2 stalks Celery, diced

  • 3 cloves Garlic, minced

  • 1 can (14.5 oz) Diced Tomatoes (or crushed tomatoes for a thicker broth)

  • 6 cups Vegetable or Chicken Broth

  • 2 tbsp Extra Virgin Olive Oil

  • 1 tsp Dried Oregano (or Italian seasoning)

  • Salt and Black Pepper to taste

  • Red Pepper Flakes (optional, for a little heat)

  • Garnish: Fresh parsley and a heavy dusting of Pecorino Romano or Parmesan cheese
