Step-by-Step Instructions

  1. Prepare the Garlic: Peel the garlic cloves. Using the flat side of a knife, gently crush each clove, or chop them roughly. Let the prepared garlic sit on your cutting board for about 10 minutes before moving to the next step. This resting period is crucial because it allows the enzyme reaction to occur, maximizing the creation of beneficial allicin.

  2. Combine the Liquids: In a clean glass mixing bowl or directly inside a clean glass quart jar, pour in one cup of raw apple cider vinegar and one cup of raw honey. Stir or whisk the two liquids together thoroughly until the honey completely dissolves into the vinegar.

  3. Add the Garlic: Place your crushed or chopped garlic cloves into the bottom of a clean glass jar, then pour the honey and vinegar mixture over the top. Ensure all the garlic is completely submerged.

  4. Seal and Infuse: Seal the jar tightly with a non-metallic lid (or place a piece of parchment paper under a metal lid to prevent the vinegar from corroding the metal). Shake the jar well to distribute the ingredients. Place the jar in a cool, dark place like a pantry or cupboard. Let it infuse for at least 3 to 5 days, shaking it once a day. Over time, the sharp bite of the garlic will mellow out significantly.

  5. Storage: After the initial infusion period, store the jar in your refrigerator. It will keep well for several weeks to a few months.

Because this mixture is highly concentrated and naturally acidic, a little goes a long way.

Recommended Daily Intake

The standard way to consume this tonic is to mix one tablespoon of the liquid into a warm (not boiling) glass of water or herbal tea first thing in the morning on an empty stomach. You can also eat a piece of the infused garlic along with it if you enjoy the taste. Alternatively, this mixture makes an excellent, tangy base for homemade salad dressings.

Important Safety Considerations

  • Never boil the mixture: Boiling or using boiling hot water will destroy the live enzymes and beneficial bacteria in both the raw honey and the apple cider vinegar.

  • Protect your teeth: Because apple cider vinegar is acidic, always dilute the tonic in water rather than drinking it straight, and rinse your mouth with plain water afterward to protect your tooth enamel.

  • Age Restriction: Never give this or any remedy containing raw honey to infants under the age of one year due to the risk of infant botulism.

  • Consult Your Doctor: If you take blood thinners, blood pressure medication, or are managing diabetes, speak with your healthcare provider before adding a high concentration of garlic or ACV to your daily routine, as they can interact with certain prescriptions.
