Baked Parmesan Yellow Squash

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.
  2. Wash the yellow squash and cut off the ends. Slice the squash into 1/4-inch thick rounds.
  3. In a shallow dish or bowl, combine the grated Parmesan cheese, almond flour (or bread crumbs), garlic powder, onion powder, paprika, salt, and pepper. Mix well to create the coating mixture.
  4. In a separate bowl, beat the eggs.
  5. Dip each slice of yellow squash into the beaten eggs, allowing any excess to drip off, and then coat the slice in the Parmesan mixture. Press down gently to make sure the coating sticks to the squash. Repeat this process for all the squash slices.
  6. Place the coated yellow squash slices on the prepared baking sheet in a single layer.
  7. Lightly spray the tops of the coated squash slices with cooking spray or drizzle them with olive oil. This will help them turn crispy during baking.
  8. Bake the squash in the preheated oven for 15-20 minutes or until they are golden brown and crispy on the outside.
  9. Remove the baked Parmesan yellow squash from the oven and let them cool slightly before serving.

These baked Parmesan yellow squash slices make a tasty and healthy side dish that pairs well with various main courses. They are great for anyone looking to add more vegetables to their meal or seeking a low-carb option. Enjoy!
