Golden Vegetable & Cheese Bake


Preparation Instructions

  1. Prep the Veggies: Grate the zucchini and potatoes. This is the most important step: place them in a clean kitchen towel and squeeze out as much liquid as possible. If they are too wet, the bake will be soggy.

  2. Whisk the Base: In a large mixing bowl, whisk together the eggs, oil, and yogurt until smooth.

  3. Combine: Add the flour, baking powder, salt, and spices to the egg mixture. Stir until you have a thick batter.

  4. Fold in Vegetables: Add all the grated and chopped vegetables (zucchini, potatoes, carrots, peppers, onions, and herbs) into the batter. Mix well until every vegetable is coated.

  5. Assemble: Grease a rectangular glass baking dish (roughly 9×13 inches). Pour the mixture in and spread it evenly with a spatula.

  6. Bake: Place in a preheated oven at 180°C (350°F). Bake for about 25-30 minutes until the center is set.

  7. The Cheesy Crust: Remove the dish briefly, sprinkle the shredded cheese (and seeds if using) evenly over the top, and return to the oven for another 10 minutes, or until the cheese is bubbly and golden brown as seen in your photo.

  8. Serve: Let it rest for at least 10 minutes before slicing. This allows the layers to firm up so you get those clean, professional-looking squares.
