Hamburg orzo soup….mine becomes stew as I love to add lots of Orzo because my granddaugher loves it that way. But you can add less to keep it more like a soup. Whole onion
1 package of dry Lipton onion soup mix
1 bag of frozen assorted veggies of your choice
Pound/pound half of Hamburg
8.5 or so can of fire roasted stewed tomatoes
Container of low salt beef broth or can which ever you use
Box of Orzo
Brown hamburger in pan in olive oil
Slice onion and add to Hamburg and cook for about 5 minutes
Add package of dry Lipton onion soup mix & stir into Hamburg and whole onion
Add fire roasted stewed tomatoes ( regular stewed tomatoes if you don’t like it spicy)
Add container of beef broth and about 2 cups of water or if using can broth add an additional 6 or 7 cans of water. (more water and broth if you want it not to be as thick as mine.)
Simmer for about 10 minutes
Add bag of frozen mixed vegetable and about half box of Orzo and let simmer till orzo is cooked and getting thick like a stew. If you prefer it to be more of a soup you just add less orzo. I like it thick and like a stew so I add about half a box sometimes a little more.
Baguette or Italian bread and butter on the side goes well. And of course a glass of red wine hits the spot.
