1- take a package of chicken breast and season however you prefer and then toss it in the air fryer to cook and brown- mine has a chicken setting so that’s easiest. You can cook the chicken any way you want though.
2- meanwhile in your soup pan, sauté onions, garlic, celery, whatever seasonings you like best but don’t skimp here, and whatever herbs you have on hand especially fresh- mine has fresh oregano, sage, tiny bit of mint, and rosemary until the fragrance is released and they are softened.
3- throw in whatever veggies you want – I had 2 bags mixed veggies in the freezer so I went with that but I’ve also thrown in fresh broccoli, beans, whatever sounds good.
4- once it’s all warm I throw in 2-4 quarts of veggie stock and a bay leaf and add the chicken cut up from the air fryer and let it simmer for a few moments til it’s tender.
5- no yoke egg noodles for 2 minutes then turn off the heat as it will continue to cook in the hot soup. You can also use broken spaghetti, orzo, rice, whatever you like!
6- sometimes we add hot sauce or lemon juice if we want extra warmth or comfort.
I don’t make it the same way every time, but use it to clean out my fridge and pantry often. The herbs and onions and garlic sautéed in butter is what starts the healing as it makes my whole family smile at the aroma as it did for me when I was growing up. What you put in from there is largely up to what you like and what you have on hand.
