Healthy Chayote & Lemon Juice

Instructions:

  1. Prepare the Chayote: Wash the chayote well. Peel the skin (though the skin is edible if organic) and remove the central seed.

  2. Chop: Cut the chayote into small cubes so it blends easily.

  3. Blend: Place the chayote cubes, water, lemon juice, ginger, and parsley into a blender.

  4. Process: Blend on high speed until the mixture is completely smooth.

  5. Strain (Optional): If you prefer a clear juice, run it through a fine strainer. However, keeping the pulp provides more fiber.

  6. Serve: Drink it fresh, preferably in the morning or before a meal.
