Step-by-Step Instructions
1. Sauté the Aromatics In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-low heat. Add the minced garlic and sauté for about 1–2 minutes. You want the garlic to become fragrant and soft without turning brown or bitter.
2. Infuse the Broth Pour the chicken broth into the pot. Add the bay leaf, thyme sprigs, and rosemary sprig. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for at least 15–20 minutes. This allows the oils from the fresh herbs to fully permeate the broth.
3. Cook the Pastina Remove the bay leaf and the woody stems of the thyme and rosemary. Taste the broth and add salt and pepper as needed. Increase the heat to bring the broth back to a boil, then stir in the pastina.
4. Simmer to Perfection Cook the pasta according to the package directions (usually 6–8 minutes). Because we are doubling the pasta, stir frequently to ensure it doesn’t stick to the bottom. The pasta will absorb a significant amount of broth, creating a thick, velvety texture.
5. The Final Assembly Once the pasta is al dente, turn off the heat. If you prefer a thinner soup, you can add a splash of hot water or extra broth at this stage.
Serving Suggestions
Ladle the soup into large mugs or deep bowls. While the soup is piping hot, sprinkle a generous amount of grated cheese over the top so it begins to melt into the broth. Top with fresh microgreens or thyme leaves for a pop of color and freshness.
