Keto Butter Pecan Cake

Ingredients:

Dry Ingredients:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 cup powdered erythritol or your preferred keto-friendly sweetener
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk (or any nut milk of your choice)

Add-ins:

  • 1 cup chopped pecans (plus a few extra for garnish, if desired)

Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1 teaspoon vanilla extract
