Keto Cinnamon Rolls



Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
  2. In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, xanthan gum (if using), and salt.
  3. In a separate bowl, beat the eggs. Add the melted butter, almond milk, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until a dough forms. Let the dough rest for a couple of minutes to allow the flours to absorb the liquid.
  5. Roll out the dough between two sheets of parchment paper to form a rectangle of about 1/4 inch thickness.
  6. Spread the softened butter over the dough, leaving a small border around the edges. Sprinkle the erythritol and ground cinnamon evenly over the butter.
  7. Starting from one long edge, carefully roll the dough into a log. Cut the log into equal-sized rolls, about 1 inch thick.
  8. Place the rolls into the prepared baking dish, leaving a little space between each one. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  9. While the rolls are baking, prepare the cream cheese frosting. In a bowl, beat the softened cream cheese and butter until smooth. Add the powdered erythritol and vanilla extract, and continue to beat until well combined.
  10. Once the rolls are done, remove them from the oven and let them cool slightly. Drizzle the cream cheese frosting over the warm cinnamon rolls.
  11. Serve and enjoy your keto low-carb cinnamon rolls!
