Ingredients:

  • 2 tbsp coconut flour
  • 1 tsp xanthan gum (optional, but helps with texture)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 tsp garlic powder (optional)

For the Filling:

  • 1/2 lb cooked and crumbled breakfast sausage or your choice of keto-friendly protein (e.g., cooked bacon, diced ham)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup diced mushrooms (optional)
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 egg (for egg wash, optional)
