Keto Stuffed Cheese Shells



Ingredients:

For the Shells:

  • 12 large zucchini slices (about 1/4 inch thick)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Filling:

  • 1 1/2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

For the Sauce:

  • 2 cups low-carb marinara sauce (store-bought or homemade)
