Instructions:
- Preheat your oven to 375°F (190°C).
- Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse the peppers and set them aside.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onions are translucent and the garlic is fragrant.
- Stir in the cauliflower rice, diced tomatoes, tomato sauce, dried basil, dried oregano, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld together.
- Stuff the bell peppers with the mixture from the skillet. Place the peppers in a baking dish.
- Bake the stuffed peppers in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Remove the peppers from the oven and sprinkle shredded mozzarella cheese on top of each pepper. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
- Once done, remove the peppers from the oven and let them cool slightly. Garnish with fresh chopped parsley.
- Serve the keto stuffed peppers hot and enjoy!
