Keto Stuffed Peppers



Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse the peppers and set them aside.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onions are translucent and the garlic is fragrant.
  5. Stir in the cauliflower rice, diced tomatoes, tomato sauce, dried basil, dried oregano, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld together.
  6. Stuff the bell peppers with the mixture from the skillet. Place the peppers in a baking dish.
  7. Bake the stuffed peppers in the preheated oven for 25-30 minutes, or until the peppers are tender.
  8. Remove the peppers from the oven and sprinkle shredded mozzarella cheese on top of each pepper. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
  9. Once done, remove the peppers from the oven and let them cool slightly. Garnish with fresh chopped parsley.
  10. Serve the keto stuffed peppers hot and enjoy!
