Keto Zucchini Garlic Bites



Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Grate the zucchinis using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  3. In a mixing bowl, combine the grated zucchini, minced garlic, Parmesan cheese, almond flour, eggs, dried oregano, dried basil, salt, and pepper. Mix everything until well combined.
  4. Take small portions of the mixture and shape them into bite-sized rounds or patties. Place them on the prepared baking sheet.
  5. Brush the tops of the zucchini bites with a little olive oil to help them crisp up in the oven.
  6. Bake in the preheated oven for 20-25 minutes or until the bites are golden brown and crispy.
  7. Remove from the oven and let them cool for a few minutes before serving.
