Mediterranean Tomato and Spinach Pasta


🍳 Instructions:

  1. Cook the Pasta
    Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.

  2. Sauté the Aromatics
    In a large skillet, heat olive oil over medium heat. Add sliced garlic and red pepper flakes. Cook for about 30 seconds until fragrant (don’t let the garlic burn).

  3. Add Tomatoes & Spinach
    Toss in the cherry tomatoes and cook for 2–3 minutes until they start to soften. Add spinach and stir until wilted.

  4. Add the Flavor
    Stir in the olives and capers. Season with salt and black pepper to taste.

  5. Combine Pasta & Sauce
    Add the cooked pasta and a splash of reserved pasta water. Toss everything together for 1–2 minutes to combine and heat through.

  6. Serve
    Plate and garnish with fresh herbs and cheese if desired.


📝 Tips:

  • Add grilled chicken or chickpeas for extra protein.

  • Swap spinach with arugula for a peppery twist.

  • Great served hot or cold as a pasta salad!
