Mexican Keto Casserole Rounds

Lena loved experimenting with different recipes, especially those that catered to her specific dietary needs. Ingredients:

  • 1 lb. ground beef
  • 1 tbsp. olive oil
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • Salt and pepper to taste
  • 1/4 cup water
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 large zucchini, cut into 1/4 inch rounds
  • 1 large yellow squash, cut into 1/4 inch rounds
