🍋 Flourless & Sugar-Free “Million Dollar” Pound Cake

This recipe uses almond flour for that rich “million dollar” texture and erythritol or monk fruit to keep it healthy.

Ingredients

  • 3 cups Super-fine blanched almond flour

  • 1/2 cup Butter (softened) or Coconut Oil

  • 3/4 cup Granulated Monk fruit or Erythritol sweetener

  • 4 Large eggs (room temperature)

  • 1/2 cup Sour cream or Full-fat Greek yogurt (this is the secret to the moisture!)

  • 2 tsp Vanilla extract

  • 1 tsp Baking powder
