Drizzle with 1 tbsp. olive oil, season with salt and pepper, and bake covered for 10 minutes. Heat a large frying pan with remaining olive oil over high heat. Add steak and sear for 1 minute per side. Remove from heat and let cool. Cut into thinly slices. Add mushrooms to skillet and cook until start to release juices. Stir in onions and red pepper, and cook for 2-3 minutes until tender. Season with salt and pepper. Remove green peppers from oven. Divide steak slices and veggies between peppers, top with cheese and season with a little more salt and pepper. Bake for 15 minutes or until cheese is melted. Remove and serve!
