INGREDIENTS FOR PORTUGUESE ALCATRA:
1/4 lb bacon, cut small
4 pounds beef chuck roast or beef rump roast
2 cups red wine
2 cup beef stock
1 large onion sliced into rings
4 whole cloves
4 bay leafs
1 1/2 teaspoon salt
3 garlic cloves crushed
tomato paste 6 teaspoons
5 teaspoons butter (1/3 stick )
1 tablespoon whole allspice
1/4 teaspoon cinnamon
14 peppercorns
1 star anise
1 teaspoon ground black pepper.

Mix wet ingredients and spices. Cut up beef roast into like 6-8 cubes. Marinate overnight. Cut up onions and put into buttered Dutch oven. Slice bacon into little pieces add that. Dump in beef and marinade. Cook at 400° for 4 hours. Add cut up mushrooms lower temp to 300° and cook for about 3 hours or until meat is massively tender
