Savory Vegetable Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated cheddar cheese
  • 1/2 cup chopped fresh spinach
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped green onions
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil

Instructions:

  1. Preheat the oven to 400°F (200°C) and grease a 12-cup muffin tin.
  2. In a large mixing bowl, combine the flour, cornmeal, baking powder, salt, and pepper.
  3. Stir in the cheese, spinach, bell pepper, and green onions.
  4. In a separate bowl, beat the eggs and then mix in the milk and vegetable oil.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let cool for 5 minutes before removing from the tin and serving.
