Seafood Chowder

Ingredients:

  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 medium potatoes, peeled and diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups fish or chicken broth
  • 1 cup heavy cream
  • 1 lb seafood mix (e.g. shrimp, scallops, and cod), peeled and diced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

 



Instructions:

  1. In a large saucepan, melt the butter over medium heat.
  2. Add the onion, potatoes, celery, and garlic and cook until the vegetables are soft, about 5 minutes.
  3. Stir in the flour and cook for 2 minutes.
  4. Gradually whisk in the broth and heavy cream.
  5. Add the seafood, thyme, basil, salt, and pepper and bring to a simmer.
  6. Cook for about 10 minutes or until the seafood is cooked through and the potatoes are tender.
  7. Serve hot with chopped fresh parsley as a garnish. Enjoy!
