Step 1: Prep the Potatoes Boil the cubed potatoes in salted water until fork-tender (about 15-20 minutes). Drain well. Mash with butter, cream, and the egg yolk until completely smooth. Set aside.
Step 2: Brown the Base In a large skillet, brown the meat over medium-high heat. Drain the excess fat. Add the onions and garlic, sautéing until softened.
Step 3: Build the Gravy Sprinkle the flour over the meat and stir for 1 minute. Add tomato paste, herbs, and Worcestershire sauce. Slowly pour in the beef broth, simmering until the sauce thickens into a rich gravy. Fold in the frozen peas and carrots.
Step 4: Assembly Transfer the meat mixture to a 9×13 baking dish (lined with foil for easy cleanup, as seen in your photo!). Spread the mashed potatoes over the top. Use a fork to create ridges and “peaks” across the surface—this creates the crispy bits!
