Slow Cooker Cabbage and Bacon

Instructions

  1. Layer the Base: Place the cabbage wedges into the slow cooker, packing them snugly. You want the cabbage to take up most of the space.

  2. Add the Flavor: Distribute the bacon chunks evenly over and between the cabbage wedges. As the fat renders, it will drip down and season the vegetable.

  3. Add Liquid: Pour the water or stock into the bottom of the pot. Do not pour it directly over the bacon, as you want the meat to retain its seasoning.

  4. Slow Cook: Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours. The cabbage should be fork-tender and slightly translucent, and the bacon should be fully cooked and soft.

  5. Serve: Lift the wedges out carefully with a slotted spoon. This is traditionally served with a side of boiled potatoes and perhaps a dollop of spicy brown mustard or a simple white parsley sauce.

Pro Tip

While this is a 3-ingredient base, a heavy pinch of black pepper or a teaspoon of caraway seeds added at the beginning can add a nice aromatic layer without breaking the budget.
