Instructions
-
Layer the Base: Place the cabbage wedges into the slow cooker, packing them snugly. You want the cabbage to take up most of the space.
-
Add the Flavor: Distribute the bacon chunks evenly over and between the cabbage wedges. As the fat renders, it will drip down and season the vegetable.
-
Add Liquid: Pour the water or stock into the bottom of the pot. Do not pour it directly over the bacon, as you want the meat to retain its seasoning.
-
Slow Cook: Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours. The cabbage should be fork-tender and slightly translucent, and the bacon should be fully cooked and soft.
-
Serve: Lift the wedges out carefully with a slotted spoon. This is traditionally served with a side of boiled potatoes and perhaps a dollop of spicy brown mustard or a simple white parsley sauce.
Pro Tip
While this is a 3-ingredient base, a heavy pinch of black pepper or a teaspoon of caraway seeds added at the beginning can add a nice aromatic layer without breaking the budget.
