Prepare the Slow Cooker Place the chicken breasts in an even layer at the bottom of your slow cooker. In a medium bowl, whisk together the cream of chicken soup, chicken broth, dry gravy mix, garlic powder, black pepper, and thyme until smooth.
The Slow Cook Pour the gravy mixture over the chicken, ensuring every piece is covered. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours. For the most tender results, the low and slow method is highly recommended.
The Finish Once the chicken is cooked through and tender, use two forks to gently break the chicken into large chunks directly in the pot. Stir the chicken back into the gravy to coat everything thoroughly.
Serve and Garnish Spoon a generous portion of mashed potatoes onto a plate. Create a small well in the center and ladle the chicken and gravy over the top. Garnish heavily with freshly chopped chives or parsley and serve immediately while hot.
