Slow Cooker Creamed Corn

Step-by-Step Instructions

This recipe is designed for the busy home cook. There is no sautéing, no pre-boiling, and very little cleanup.

1. Prep the Slow Cooker

Start by lightly greasing your slow cooker with non-stick cooking spray or a thin layer of butter. This prevents the sugars in the corn from sticking to the sides during the long cook time.

2. Layer the Ingredients

Pour both bags of frozen corn into the bottom of the slow cooker. Sprinkle the sugar and black pepper evenly over the top. Next, place the entire block of cream cheese right in the center. Finally, scatter your butter cubes around the cream cheese.

3. Set and Forget

Cover the slow cooker with a tight-fitting lid. Set the temperature to Low and cook for 4 hours. If you are in a rush, you can cook it on High for 2 hours, though the low heat allows the flavors to meld more deeply.

4. Stir and Serve

Once the time is up, remove the lid. You will see the melted cream cheese and butter sitting on top of the corn. Use a large spoon to stir everything together until the cheese is completely incorporated and the sauce is smooth. Serve it warm right out of the pot.

Why This Recipe Works for Entertaining

If you’re managing a busy kitchen, oven space is usually at a premium. Using a slow cooker for your side dishes frees up your oven for the main course. Beyond the convenience, this creamed corn stays at the perfect serving temperature for hours using the “Warm” setting, making it ideal for buffet-style meals.

Recipe Variations to Try

While the 5-ingredient version is a classic, you can easily customize this dish to fit different themes:

  • Loaded Creamed Corn: Stir in some crispy bacon bits and chopped green onions just before serving.

  • Spicy Kick: Add a small can of diced green chiles or a few slices of fresh jalapeño into the pot at the beginning.

  • Cheesy Delight: Stir in a cup of shredded sharp cheddar cheese during the last 15 minutes of cooking for an extra-gooey texture.
