Sticky Apricot Chicken


Instructions

  1. Prep the Chicken: Place the chicken thighs in the bottom of your slow cooker. If you prefer a less fatty sauce, you can trim any excess skin or fat beforehand.

  2. Mix the Glaze: In a small bowl, whisk together the entire jar of apricot preserves and the soy sauce until combined.

  3. Coat and Cook: Spoon the mixture evenly over the chicken thighs. Cover and cook on Low for 6–8 hours or on High for 3–4 hours. The chicken should be tender and the sauce thickened into a dark, sticky glaze.

  4. Finish: If the sauce is too thin for your liking at the end, you can whisk in a small cornstarch slurry or simply leave the lid off for the last 30 minutes of cooking.

  5. Serve: Garnish with fresh herbs and serve over a bed of white rice or quinoa to soak up that extra sauce.
