1 and ½ pound chicken breast, boneless, skinless and cubed
1 tablespoon olive oil
3 tablespoons soy sauce
2 tablespoons flour
Salt and black pepper to the taste
1 tablespoon ketchup
2 tablespoons white vinegar
1 teaspoon ginger, grated
2 tablespoons sugar
½ cup cashews, chopped
2 garlic cloves, minced
1 green onion, chopped
1. Put chicken pieces in a bowl, season with salt, black pepper, add flour
and toss well.
2. Heat up a pan with the oil over medium-high heat, add chicken, cook
for 5 minutes and transfer to your slow cooker.
3. Add soy sauce, ketchup, vinegar, ginger, sugar and garlic, stir well,
cover, cook on Low for 4 hours, add cashews and green onion, stir,
divide into bowls and serve for lunch.
