Zesty Carrot Appetizer


Preparation Steps

  1. Sauté the Carrots: Heat the oil in a large pan. Add the grated carrots and sauté over medium heat for about 5–7 minutes until they soften slightly but still retain a bit of a “crunch.”

  2. Add Aromatics: Add the finely chopped peppers and minced garlic to the pan. Sauté for another 2–3 minutes until fragrant.

  3. Seasoning: Remove the pan from the heat. Stir in the salt, vinegar, and any optional spices.

  4. The Fresh Touch: Once the mixture has cooled down slightly, fold in the chopped parsley.

  5. Canning (Optional): If you want to store them like in the photo, fill clean glass jars while the mixture is still warm. Close the lids tightly and turn them upside down to vacuum seal. Once cooled, store in a cool, dark place or the refrigerator.


How to Serve

  • As a Salad: Serve cold or at room temperature.

  • With Yogurt: This is amazing when mixed with thick Turkish/Greek yogurt and a drizzle of olive oil on top.

  • As a Side: Perfect alongside grilled meats, chicken, or as part of a “Meze” platter.

Tip: If you prefer a more “pickled” taste, you can add a teaspoon of sugar and a squeeze of lemon juice to the vinegar mix!
