5-Minute Berry Whip

Step-by-Step Instructions

1. Prep the Berry Base

In a small bowl, take about a third of your berries and lightly mash them with a fork. You want a bit of “syrup” to create those swirls. Leave the rest of the berries whole for texture.

2. Cream the Foundation

In a large mixing bowl, beat the softened cream cheese, powdered sugar, vanilla, and lemon zest together until completely smooth. If the cream cheese is too cold, you’ll get tiny lumps, so take the time to let it soften!

3. The Big Whip

In a separate chilled bowl, whip the heavy cream until stiff peaks form. Be careful not to go too far, or you’ll end up with berry-flavored butter!

4. The Marriage of Flavors

Gently fold the whipped cream into the cream cheese mixture using a spatula. Once combined, pour in your mashed and whole berries.

Pro Tip: Do not over-mix! Use a “figure-eight” motion with your spatula. Stop as soon as you see those beautiful streaks of red and purple.

Serving & Storage Tips

How to Style It

For the “fancy” look Nana Betty loved, serve this in individual glass ramekins or even wine glasses. Top with a single mint leaf or a dusting of extra powdered sugar right before serving.

Can You Make It Ahead?

While this is best served immediately (within 30 minutes), you can store it in the fridge for up to 4 hours. Any longer and the berries will start to release too much moisture, and the “fluff” will lose its volume. If you’re making it for a party later in the day, keep the whipped cream and berry base separate and fold them together just before the guests arrive.

Variations to Try

  • The “Adult” Version: Add a tablespoon of Grand Marnier or Limoncello to the berry mix.

  • The Crunch Factor: Fold in crushed graham crackers or toasted almonds for a bit of bite.

  • Chocolate Lover’s: Shave some dark chocolate over the top to balance the tartness of the raspberries.
