Step-by-Step Instructions
1. Prep the Crust
In a small bowl, crush your graham crackers into fine crumbs. Mix in the melted coconut oil or almond milk until the texture resembles damp sand. Press this mixture firmly into the bottom of a clean 12oz or 16oz mason jar to form your even base layer.
2. Whip the Cheesecake Filling
In a medium bowl (or a small blender for the smoothest texture), combine the Greek yogurt, protein powder, blended cottage cheese (or light cream cheese), and vanilla extract. Whisk vigorously until the protein powder is completely dissolved and the mixture is silky, thick, and lump-free.
3. Simmer the Quick Blueberry Compote
Add the 1/2 cup of blueberries and a tablespoon of water to a small saucepan over medium heat. As they heat up, gently burst the berries with the back of a spoon to release their juices. Once simmering, stir in the chia seeds and remove from the heat. Let it sit for 3-5 minutes; the chia seeds will absorb the liquid and turn it into a thick, glossy, naturally sweet compote.
4. Layer Your Masterpiece
Now for the fun part! Spoon half of your creamy protein cheesecake mixture over the graham cracker crust. Drop a few fresh blueberries on top of this layer for a burst of texture. Spoon the remaining cheesecake mixture on top, and finish by pouring the cooled blueberry compote over the very top.
5. Chill and Serve
Garnish with a handful of plump, fresh blueberries and a leaf of mint. For the absolute best texture, seal the jar and let it chill in the fridge for at least 2 hours (or overnight). This allows the crust to set and the flavors to fully meld together.
Pro-Tips for the Perfect Protein Jar
-
The Protein Powder Matters: A whey-casein blend works best for this recipe because casein absorbs more liquid, resulting in a much thicker, pudding-like cheesecake consistency. If using 100% whey, you may want to reduce any extra liquid to keep it from getting runny.
-
Switch Up the Fruit: Not a fan of blueberries? This base works beautifully with a quick raspberry, strawberry, or blackberry compote. You can even use dark cherries for a “Black Forest” cheesecake vibe!
-
Add Some Crunch: If you miss the crunch of a traditional crust after it sits overnight, save half of the graham cracker crumbs and sprinkle them on top of the blueberry layer right before you eat it.
