Dirty South Gumbo

Ingredients:

  • 1 lb andouille sausage, sliced
  • 1 lb chicken thighs, cut into bite-sized pieces
  • 1 lb shrimp, peeled and deveined
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 cup okra, sliced
  • 1 cup chicken broth
  • 1 can diced tomatoes
  • 2 cups water
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup uncooked rice



Instructions:

  1. In a large pot, brown the andouille sausage over medium heat. Remove from pot and set aside.
  2. In the same pot, add the chicken and cook until browned. Remove from pot and set aside.
  3. Add the shrimp to the pot and cook until pink. Remove from pot and set aside.
  4. Add the onion, bell pepper, celery, and garlic to the pot and sauté until softened.
  5. Stir in the okra, chicken broth, diced tomatoes, water, cayenne pepper, paprika, thyme, oregano, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce heat to low and let simmer for 15 minutes.
  7. Stir in the rice and bring to a boil.
  8. Reduce heat to low, cover pot, and let simmer for 20 minutes.
  9. Add the andouille sausage, chicken, and shrimp back to the pot and let simmer for an additional 10 minutes.
  10. Serve and enjoy!
