Step-by-Step Instructions

1. Prepare the Pasta Bring a large pot of salted water to a boil. Cook the rotini according to the package instructions until it is al dente. It is important not to overcook the pasta, as it will soften slightly once the dressing is added. Drain the pasta and rinse it under cold water immediately to stop the cooking process and cool it down.

2. Brown the Taco Meat While the pasta water is boiling, place a large skillet over medium-high heat. Add the ground beef and cook until fully browned, breaking it into small crumbles as it cooks. 5. Chill and Serve Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Wait to add the lettuce and the Doritos until right before you are ready to serve. This ensures the lettuce stays crisp and the chips provide that iconic, “locos” crunch. Just before serving, fold in the shredded lettuce and the crushed Doritos.
