Instructions:

  1. Blend Ingredients: In a blender, combine the softened cream cheese, eggs, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and well combined. You can also use a hand mixer or a whisk, but a blender tends to create a smoother batter.
  2. Rest the Batter: Allow the batter to rest for a few minutes. This helps the bubbles to settle, resulting in better crepes.
  3. Preheat Pan: Heat a non-stick skillet or crepe pan over medium heat. You can lightly grease the pan with a small amount of butter or oil, but the batter usually contains enough fat to prevent sticking.
  4. Cook the Crepes: Pour a small amount of the batter into the center of the hot pan, swirling it around to spread it thinly and evenly. You want to make a thin layer. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden.
