Slow Cooker Hearty Beef & Tomato Supper
This recipe transforms simple pantry staples into a rich, savory dish that’s perfect over mashed potatoes, pasta, or even just with a side of crusty bread.
Ingredients
-
2 lbs Ground Beef: Lean (80/20 or 90/10) works best so the dish isn’t too oily.
-
2 cups Tomato Juice (or Tomato Sauce): This provides the liquid base for slow cooking.
-
1 Large White Onion: Diced small.
-
2 cloves Garlic: Minced (or 1 tsp garlic powder).
-
1 tsp Dried Oregano: For that classic herb aroma.
-
1/2 tsp Salt & Black Pepper: To taste.
Instructions
-
Prep the Beef: Place the raw ground beef into the bottom of the slow cooker. You can break it up slightly with a wooden spoon, but the slow cooking process will naturally tenderize it.
-
Add the Aromatics: Layer the diced onions, minced garlic, oregano, salt, and pepper directly over the beef.
-
The Liquid Gold: Pour the tomato juice over the top, ensuring the beef is mostly covered. This moisture is what keeps the meat from drying out during the long cook time.
-
Slow Cook: Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
-
Finish & Serve: Once finished, stir the mixture thoroughly to break up any remaining large chunks of beef. If the sauce is too thin, you can leave the lid off for the last 30 minutes to let it thicken up.
