Step-by-Step Instructions

  1. Prepare the Jar: Ensure your glass mason jar is completely clean and completely dry. Any moisture left in the jar can introduce unwanted bacteria, so air-drying or wiping it down thoroughly is essential.

  2. Layer the Ingredients: Start layering your ingredients into the jar. Begin with a few slices of lemon at the bottom, followed by a handful of ginger slices, a few smashed garlic cloves, a piece of cinnamon stick, and a sprinkle of peppercorns. Repeat this layering process until the jar is filled up to about an inch below the rim. Press down gently with a clean spoon to pack them tightly.

  3. Pour the Honey: Slowly pour your raw honey over the layered ingredients. The honey will take some time to seep down through all the nooks and crannies. Pour a little, let it settle, and pour some more. Use a clean butter knife or a chopstick to gently poke down the sides of the jar to release any trapped air bubbles.

  4. Seal and Store: Make sure all the solid ingredients are completely submerged under the honey. Wipe the rim of the jar clean, screw the lid on tightly, and place it on your kitchen counter.

  5. The Fermentation Process: Let the jar sit at room temperature for 3 to 5 days.
