Keto Kentucky Butter Cake

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease a bundt pan or a cake pan with butter or non-stick cooking spray.
  2. In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt until well combined.
  3. In another bowl, whisk the eggs, melted butter, almond milk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until you have a smooth batter.
  5. Pour the batter into the greased bundt pan and spread it evenly.
  6. Bake the cake in the preheated oven for about 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the butter glaze. In a small saucepan over low heat, melt the butter and then stir in the erythritol, water, and vanilla extract. Cook until the sweetener dissolves, and the glaze becomes slightly thickened.
  8. Once the cake is done baking, remove it from the oven and let it cool in the pan for about 10 minutes.
  9. Poke holes all over the cake using a skewer or toothpick. Pour the butter glaze evenly over the warm cake, allowing it to seep into the holes.
  10. Let the cake cool completely in the pan before gently inverting it onto a serving plate.
