Keto Old Fashioned Meatloaf



Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, almond flour, grated Parmesan, chopped onion, chopped green bell pepper, minced garlic, eggs, almond milk, Worcestershire sauce, Dijon mustard, dried oregano, dried thyme, salt, black pepper, and cayenne pepper (if using). Mix everything together until well combined.
  3. Form the mixture into a loaf shape and place it in a greased loaf pan.
  4. In a small bowl, mix together the ingredients for the glaze: sugar-free ketchup, apple cider vinegar, and keto-friendly sweetener.
  5. Spread the glaze over the top of the meatloaf, making sure it’s evenly coated.
  6. Bake the meatloaf in the preheated oven for about 1 hour or until it reaches an internal temperature of 160°F (71°C).
  7. Once cooked, remove the meatloaf from the oven and let it rest for a few minutes before slicing and serving.
