Keto Strawberry Cheesecake Cinnamon Rolls with Pecans



Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt for the dough.
  3. In another bowl, beat the eggs, softened cream cheese, melted butter, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients until you have a smooth dough. You might need to knead it a bit with your hands.
  5. Place the dough between two sheets of parchment paper and roll it into a rectangle about 1/4 inch thick.
  6. Spread the softened butter over the dough and sprinkle with cinnamon, erythritol, and chopped pecans.
  7. Carefully roll the dough into a log, like a cinnamon roll. Slice into 8 equal pieces.
  8. Place the slices in a greased baking dish.
  9. In a separate bowl, mix together the softened cream cheese, powdered erythritol, and vanilla extract for the cheesecake filling. Fold in the chopped strawberries.
  10. Spoon the cheesecake mixture on top of the cinnamon roll slices.
  11. Bake in the preheated oven for about 25-30 minutes, or until the rolls are golden brown.
  12. Allow them to cool for a few minutes before serving.
