Directions
- In a large mixing bowl, combine the ground beef, bread crumbs, milk, egg, chopped onion, salt, pepper, and Worcestershire sauce. Mix until everything is just incorporated — don’t overwork the meat or the patties will be tough.
- Divide the mixture and shape it into 4 to 6 oval patties of roughly equal size.
- Heat the vegetable oil in a skillet over medium-high heat. Sear the patties for about 3 to 4 minutes per side until browned on the outside. This step builds flavor — don’t skip it. Transfer the browned patties to the slow cooker.
- Using the same skillet, cook the sliced mushrooms for about 5 minutes, stirring occasionally, until they start to brown and release their moisture. Add the mushrooms to the slow cooker over the patties.
- In a small bowl, whisk together the condensed cream of mushroom soup and beef broth until smooth. Pour this mixture evenly over the patties and mushrooms in the slow cooker.
- Cover and cook on LOW for 4 to 5 hours, until the patties are fully cooked through and tender.
- About 30 minutes before you’re ready to serve, stir together the cornstarch and water in a small bowl to make a slurry. Pour it into the slow cooker and gently stir to incorporate. Replace the lid and let the gravy thicken for the remaining time.
- Serve the patties topped with the mushroom gravy and a scattering of freshly chopped parsley.
Variations & Tips
Lighter option: Ground turkey works well in place of beef if you want to reduce the fat content. The patties will be slightly leaner but still tender and flavorful when slow-cooked in the gravy.
Sneak in vegetables: Finely grated carrot or zucchini can be mixed directly into the meat mixture without affecting the texture much. It’s an easy way to add nutrition, especially if you’re cooking for picky eaters.
Deeper mushroom flavor: Swap the standard white button mushrooms for cremini, shiitake, or a wild mushroom blend. Each variety brings its own earthy complexity to the gravy.
Richer gravy: A small splash of red wine stirred into the soup and broth mixture adds a subtle depth that elevates the sauce. A teaspoon of Dijon mustard is another great addition if you want a slightly more robust, tangy edge to the gravy.
Make it ahead: These patties reheat beautifully, making this a great meal-prep option. Store leftovers in an airtight container in the refrigerator for up to three days and warm gently on the stovetop with a splash of broth if the gravy has thickened.
