Slow Cooker Salsa Chicken

Instructions

  1. Prep the Chicken: Place the chicken breasts in the bottom of your slow cooker in a single layer.

  2. Season and Pour: Sprinkle the taco seasoning evenly over the chicken, then pour the salsa over the top until the chicken is well-covered.

  3. Slow Cook: Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours. The longer you cook it on low, the easier it will be to shred.

  4. Shred and Melt: Once the chicken is tender, use two forks to shred it directly in the pot, mixing it with the juices and salsa. Sprinkle the shredded cheese over the top, cover for another 5 to 10 minutes until the cheese is bubbly and melted, then serve.

Since this is such a versatile base, you can serve it in a few different ways to keep things interesting:

  • Tacos or Burritos: Use warm flour or corn tortillas with a dollop of sour cream.

  • Rice Bowls: Serve it over cilantro-lime rice with some black beans.
