Instructions
-
Prep the Meat: Pat the beef cubes dry with a paper towel. Season them generously with salt, pepper, and the smoked paprika. If you have extra time, searing the meat in a hot pan for 2 minutes before adding it to the slow cooker will add a deeper layer of flavor, but “dump and go” works perfectly too!
-
Layer the Pot: Place the beef cubes into the slow cooker. Add the chopped onions and the vibrant bell peppers on top.
-
Add the Liquids: In a small bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, and minced garlic. Pour this mixture over the meat and vegetables.
-
Slow Cook: Cover and cook on Low for 7-8 hours or on High for 3-4 hours. You’ll know it’s ready when the beef is fork-tender.
-
Thicken the Sauce (Optional): If you prefer a thicker gravy, whisk the cornstarch and water together in a small cup. Stir it into the slow cooker about 30 minutes before serving and turn the heat to High.
-
Serve: This is fantastic served over a bed of buttery mashed potatoes, fluffy white rice, or even some thick noodles.
Tip: If you want a bit of a kick, throw in a pinch of crushed red pepper flakes with the sauce—it balances the sweetness of the onions and peppers beautifully.
