Prep: Layer the grated ginger, diced onion, and sliced garlic into a clean glass jar.

Citrus: Add the lemon zest and pour the lemon juice over the mixture.

Submerge: Pour the honey into the jar until all the ingredients are completely covered. Stir gently with a non-metal spoon to remove air bubbles.

Infuse: Seal the jar and let it sit in a cool, dark place for at least 24 hours. For a more potent ferment, you can leave it for up to 2 weeks, shaking it once a day.

Store: Once the honey becomes thin and syrupy, it’s ready. Store it in the refrigerator.
How to Use It

Direct: Take 1 tablespoon daily for wellness, or every few hours if you feel a “tickle” in your throat.

Tea: Stir a spoonful into warm (not boiling) water. Boiling water can kill the beneficial enzymes in raw honey.

Dressing: Use the liquid as a base for a spicy, healthy salad vinaigrette.
⚠️ A quick note on safety: Because this contains honey, it should never be given to infants under one year old. Also, keep an eye out for any signs of mold; if the ingredients aren’t fully submerged in the honey/lemon juice, they can spoil.
