Ingredients

  • 4 cups Potatoes (peeled and diced)

  • 2 cups Corn (frozen, canned, or fresh)

  • 1 Large onion (finely chopped)

  • 2 Carrots (diced)

  • 2 stalks Celery (sliced)

  • 3 cloves Garlic (minced)

  • 4 cups Vegetable or Chicken broth

  • 1 cup Heavy cream (or whole milk for a lighter version)

  • 2 tbsp Butter or olive oil

  • 1 tsp Dried thyme

  • Salt & Black pepper (to taste)

  • Optional toppings: Crispy bacon bits, chopped chives, or shredded cheddar cheese.
