Instructions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Place the zucchini rounds on the baking sheet. Brush each round lightly with olive oil and sprinkle with salt and pepper.
Bake the zucchini rounds for about 5 minutes to slightly soften them.
Remove from the oven and top each zucchini round with a small amount of pizza sauce, shredded mozzarella cheese, and your chosen pizza toppings.
Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving.
