CHEESY KETO AIR FRYER ROLLS



These incredibly cheesy keto airy fryer rolls are the perfect little side to go with any entree! Prepared easily and quickly air fried, you can enjoy these in under 20 minutes! Oven directions also provided below.

AIR FRYER ROLLS

Using the air fryer has been a time saver for my family. We use it almost daily for making chicken wings, burgers, shrimp, chicken nuggets, kale chips, and even cookies. I’ve actually even tried a frozen ribeye steak and it worked incredibly well! So it makes sense that I would want to try my hand at a quick dinner roll for the family. I just adapted from my Cheesy Keto Rolls recipe and it worked like a charm.

KETO AIR FRYER ROLLS

You can roll your dough into balls and place right onto the tray of the air fryer, but I found that because these keto rolls are so cheesy, they do end up seeping through the grate. My first idea to prevent these was using paper cupcake liners. They worked great but even greasing them some of the batter did stick. The best option is to purchase silicone cupcake liners so these rolls just pop right out without issue!



KETO NUT FREE ROLLS

I’d like to clear up this constant question get asked almost daily about whether coconut is a nut. While the US Food & drug Administration (FDA) claims that coconut is a tree nut becomes it comes from a tree, it is in fact a FRUIT. People who have tree nut allergies may be allergic to coconut as well, but being allergic to coconut is not the same as having a tree nut allergy.

My own son was diagnosed with a Peanut and Tree Nut allergy at the age of 2. He has safely eaten coconut all these years without issue and he is now 14. Coconut is a fruit, called a drupe. It’s like a peach with a pit.

The American College of Allergy, Asthma and Immunology says it well: “Coconut is not a botanical nut: it is classified as a fruit, even though the FDA recognizes coconut as a tree nut. While allergic reactions to coconut have been documented, most people who are allergic to tree nuts can safely eat coconut. If you are allergic to tree nuts, talk to your allergist before adding coconut to your diet.”

AIR FRYER OR OVEN DIRECTIONS

I’ve been really enjoying using my air fryer regularly. It truly just takes so much less time than using the oven. I’ve got a delicious Air Fryer Coconut Shrimp, as well as Paleo Chicken Nuggets made in the air fryer, and even Lemon Slice & Bake Air Fryer Cookies! But if you haven’t yet made the investment for an air fryer, then you can make these tasty keto rolls in your oven as well. Place them in mounds on a baking sheet pan or use a silicone muffin pan if you prefer. Preheat your own to 400 degrees and bake for 20-25 minutes until golden brown.

HOW TO STORE KETO ROLLS

These rolls are truly best eaten immediately after cooking. If you do have any left over, which is highly unlikely, but still, if you do, simply let them cool completely and store in an airtight container in the fridge for up to 3 days.

Ingredients

  • 2 cups shredded mozzarella cheese
  • 2 ounces mascarpone cheese or cream cheese softened
  • 3 large eggs
  • 2 ounces coconut flour or ½ cup or 58 grams
  • ½ tablespoon baking powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • optional butter to top each roll
