Creamy Parmesan Italian Sausage Ditalini Soup

Instructions:

  1. In a large pot, cook Italian sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery until softened.
  3. Stir in diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Add ditalini pasta and cook until al dente, stirring occasionally.
  5. Lower heat and stir in cooked sausage, heavy cream, and spinach/kale. Simmer for 5 minutes.
  6. Mix in Parmesan cheese until melted. Adjust seasoning with salt and pepper.
  7. Serve hot, garnished with fresh parsley and additional Parmesan cheese if desired.
