Ingredients:
For the Salad:
- 1 pound ground beef or ground turkey
- 1 packet of taco seasoning (make sure it’s Keto-friendly or make your own)
- 1 head of lettuce, shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped green bell pepper
- 1/4 cup sliced black olives
For the Keto Catalina Dressing:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon tomato paste
- 1 tablespoon granulated erythritol or your preferred keto sweetener
- 1 teaspoon Dijon mustard
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
