Lemon Bliss Bars


Instructions

  1. Prep the Oven and Pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving a little overhang on the sides for easy removal.

  2. Make the Shortbread Crust: In a medium bowl, cream together the softened butter and 1/2 cup sugar until smooth. Stir in the 2 cups of flour and salt. The mixture will be a bit crumbly. Press it firmly and evenly into the bottom of your prepared pan.

  3. Bake the Base: Bake the crust for 18–20 minutes, or until the edges are just barely starting to turn a light golden brown.

  4. Prepare the Filling: While the crust is baking, whisk together the 1 1/2 cups sugar and 1/4 cup flour in a large bowl. Add the eggs one at a time, whisking well after each. Stir in the lemon juice and zest until the mixture is completely combined and smooth.

  5. Final Bake: Pour the lemon mixture over the hot crust. Return the pan to the oven and bake for another 20–25 minutes. The filling should be set and no longer jiggle in the center.

  6. Cool and Serve: Let the bars cool completely in the pan at room temperature. For the cleanest cuts, chill them in the fridge for at least 1-2 hours. Dust generously with powdered sugar just before slicing into squares.
