1. Marinate the Salmon
In a bowl, whisk together the sweet chili sauce, soy sauce, garlic, and ginger. Toss the salmon cubes in the mixture until they are well-coated. Let them sit for 5–10 minutes if you have the time; otherwise, dive right in.
2. Cook to Perfection
You have two great options here:

Air Fryer (Recommended): Arrange bites in a single layer. Air fry at 400°F (200°C) for 6–8 minutes until the edges are charred and caramelized.

Stovetop: Heat olive oil in a large skillet over medium-high heat. Sear the salmon cubes for about 2–3 minutes per side. Don’t overcrowd the pan, or they’ll steam instead of sear!
3. Mix the Dip
While the salmon cooks, stir together the yogurt, lime zest, lime juice, honey, and cilantro in a small ramekin. Season with a pinch of salt.
4. Serve
Plate the salmon bites hot. Garnish with extra lime wedges and sesame seeds if you’re feeling fancy. Use the yogurt dip for dunking or drizzle it right over the top.

Don’t overcook: Salmon continues to cook for a minute after you take it off the heat. Aim for an internal temperature of about $145^\circ F$ ($63^\circ C$) for that perfect flake.
